What’s for dinner tonight? For people on a gluten free diet, the answer is often difficult. However, this blog post will show you how to make Mexican Rice Bowls that are gluten free and delicious! 

Gluten is a type of protein that is found in many foods. It’s what makes dough stretchy and gives bread its airiness.

Gluten free diets eliminate all products containing gluten, such as wheat, barley, rye, and malt. This includes food such as bread, cakes, hamburger buns, pasta, donuts, and cookies.

Therefore, just about anything that isn’t meat or fruits or veggies are unfortunately off-limits on a gluten free diet! It’s for this reason that Mexican rice bowls are so great – they’re naturally gluten free!

Really, you can call it anything you like but I love to call it delicious!

You can choose whatever extras you want in your Mexican rice bowl recipe. For instance, you can start with some chicken or ground beef if you’d like meat in your Mexican bowl.

For example, some other ingredients to get are black beans, corn, cheese, guacamole, salsa, sour cream, and more!

Chipotle is definitely a favorite of many, including my family! When I don’t feel like cooking, it is a great go-to gluten free dinner to grab.

One really nice thing about Chipotle is its variety of ingredients. They have so many different Mexican rice bowl toppings to choose from.

Chipotle also has quite a few meat options and meatless options as well. You can make a Mexican rice bowl with beef, chicken, pork, or steak or you can have Sofritas (tofu) or just veggies.

You can make a delicious burrito bowl in so many different ways!

  1. First, cook the ground beef in a skillet over medium-high heat until it is fully browned. 
  2. Following that, add the taco seasoning and one cup of water to the skillet. Let it simmer for about 5 minutes until the sauce thickens and most of the water is cooked out.
  3. After that, cook your frozen corn in the microwave or on your stovetop. Whichever way is easiest for you. 
  4. Following that, turn the heat on low, add the beans and the remaining cup of water to the meat and warm through.
  5. Finally, create your rice bowls by making a layer of brown rice at the bottom of a bowl.
  6. Then add your cooked corn, beans, taco meat, and salsa to your bowl.
  7. Once you have completed your Mexican rice bowl, you can top it with the chopped cilantro and other additional toppings if you wish. 
  8. Serve and enjoy!

Other Great Ways To Make Your Own Mexican Rice Bowl

There are so many ways to customize your Mexican rice bowl to make it your very own delicious creation!

However, there are some general ingredients that I like to keep on hand to make preparing Mexican rice bowls as easy as possible.

  • Rice (brown, white, jasmine rice or even basmati is great, but any long grain or short grain rice will work)
  • Canned beans (black, pinto, and even garbanzo beans are delicious)
  • Corn (frozen, canned, or fresh works great)
  • Onion and garlic powder for seasoning (especially good with the black beans)

The recipe that I shared above is made with ground beef. However, you could actually substitute the beef for ground turkey if you wish.

If you prefer chicken though, that is no problem at all. You can easily substitute shredded chicken or any other meat that you prefer for the beef in this recipe.

Additionally, a great shortcut for your chicken rice bowls would be to use leftover chicken you already have in your fridge or even a pre-cooked rotisserie chicken from the store.

The great thing about this recipe is that you can really make it your own. Therefore, you can feel free to use my recipe as a guideline and make it any way you like!

How to Meal Prep Your Rice Bowls Ahead of Time

Another great thing about these rice bowls is that they can be prepped ahead of time for easy grab-and-go meals throughout the week!

You also don’t even need to assemble the bowls, you could make it a fun family dinner by setting out the ingredients and letting your family or guests build their own Mexican rice bowls as they please.

Some great tips for prepping your rice bowls ahead of time would be to pre-cook the rice, beans, and meat. Then you can easily assemble your meals when you are ready to eat and even try different varieties each day.

You can put your rice, meat, and beans in meal prep containers that can be easily popped in the microwave and topped with whatever you wish!

How Long Do Rice Bowls Last in the Fridge?

If possible, your Mexican rice bowl should be eaten within a day or two. I would say up to 4 days is perfectly fine though.

If you put your pre-prepped rice bowls in containers that are freezer safe though, they can last a lot longer, and they actually freeze and reheat very well!
