- 6 medium gluten free flour tortillas we love Mission brand
- 6 scrambled eggs
- ½ lb cooked ground sausage
- ½ bell pepper minced
- ⅓ cup bacon bits
- ½ cup shredded cheese we use cheddar
- Cooking spray
First, combine the cooked sausage, scrambled eggs, bacon bits, bell pepper, and cheese in a large bowl and stir to combine.
Next, scoop out about ½ cup of the mixture and place it into the center of one flour tortilla.
Fold in the sides of the tortilla and roll it together somewhat tightly.
Repeat the last two steps with the rest of the ingredients.
Finally, spray your air fryer basket with cooking oil, place the burritos into the air fryer basket and spray them with cooking oil as well.
Cook the burritos at 330 degrees F for about 5 minutes or until they are warm and slightly crispy.
Dairy-Free Sub: omit the shredded cheese or use vegan cheese instead.
- Prep your ingredients ahead of time and store them in the fridge for an easy dinner after a busy day.
- Purchase a block of cheese rather than shredded and use a cheese grater to shred your own. It will taste much fresher.
