Ingredients
  

  • 8 Gluten Free Everything Bagels
  • 8 Slices of Cheese we really love Gouda
  • 8 Eggs
  • 8 Slices of Cooked Bacon or Turkey Bacon
  • 3 tablespoon Milk or Unsweetened Nut Milk
  • Salt and Pepper to taste
  • Cooking Spray

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Mix the eggs, milk and salt, and pepper in a bowl.
  • Pour the egg mixture onto a small sheet pan that has been sprayed with cooking spray.
  • Bake for 8 minutes or until the eggs are set in the middle.
  • Once the eggs have cooled, cut them into eight pieces.
  • Toast your bagels and assemble your bagel sandwiches as you wish. I like to do one slice of egg, one slice of bacon cut in two, and cheese on top.
  • Serve and enjoy!

Notes

Dairy Free Sub: if you would like to make this sandwich dairy free, you can sub the cheese with sliced vegan cheese.
