Ingredients
  

  • 3 cups cooked brown rice
  • 1 pound ground beef
  • cup gluten-free taco seasoning
  • 2 cups water
  • 1 cup frozen corn
  • 1 can black beans drained and rinsed
  • Salsa of choice we love Verde!
  • Chopped cilantro for garnish optional

Optional Toppings

  • Sour cream omit if on a dairy free diet
  • Shredded Cheese dairy free sub: vegan cheese
  • Lime wedges

Instructions
 

  • First, cook the ground beef in a skillet over medium-high heat until it is fully browned.
  • Following that, add the taco seasoning and one cup of water to the skillet. Let it simmer for about 5 minutes until the sauce thickens and most of the water is cooked out.
  • After that, cook your frozen corn in the microwave or on your stovetop. Whichever way is easiest for you.
  • Following that, turn the heat on low, add the beans and the remaining cup of water to the meat and warm through.
  • Finally, create your rice bowls by making a layer of brown rice at the bottom of a bowl.
  • Then add your cooked corn, beans, taco meat, and salsa to your bowls.
  • Once you have completed your Mexican rice bowl, you can top it with the chopped cilantro and other additional toppings if you wish. 
  • Serve and enjoy!
