Ingredients

  • 6 medium gluten free flour tortillas we love Mission brand
  • 6 scrambled eggs
  • ½ lb cooked ground sausage
  • ½ bell pepper minced
  • cup bacon bits
  • ½ cup shredded cheese we use cheddar
  • Cooking spray

Instructions

  • First, combine the cooked sausage, scrambled eggs, bacon bits, bell pepper, and cheese in a large bowl and stir to combine.
  • Next, scoop out about ½ cup of the mixture and place it into the center of one flour tortilla.
  • Fold in the sides of the tortilla and roll it together somewhat tightly.
  • Repeat the last two steps with the rest of the ingredients.
  • Finally, spray your air fryer basket with cooking oil, place the burritos into the air fryer basket and spray them with cooking oil as well.
  • Cook the burritos at 330 degrees F for about 5 minutes or until they are warm and slightly crispy.

Notes

Dairy-Free Sub: omit the shredded cheese or use vegan cheese instead.
  • Prep your ingredients ahead of time and store them in the fridge for an easy dinner after a busy day.
  • Purchase a block of cheese rather than shredded and use a cheese grater to shred your own. It will taste much fresher.
  • If you are looking for a bit of a shortcut, use Egg Beaters rather than eggs to make your scrambled eggs.
