- Carrots - peeled and cut into cubes
- Celery stalks - halved lengthwise and sliced
- Low-sodium chicken broth, chicken stock or bone broth (we use Kettle & Fire gluten free)
- Lemon - zested and juiced
- Ground coriander
- Chopped fresh dill
- Kosher salt and freshly ground black pepper (to taste)

Chop the veggies
STEP 1: Grab a cutting board and a sharp knife and cut the veggies. Dice the onion, peel and cut the carrots into one inch cubes, cut the celery stalks length-wise and then chop into one inch pieces, and chop the fresh dill.
Prep the lemon
STEP 2: Use a microplane to zest your lemon in a small bowl. Then cut the lemon in half and squeeze out the juice into the bowl.
Cook the chicken
STEP 3: Saute the onions and ground chicken in the oil in a pan on the stove until the chicken is cooked through and the onions are translucent and slightly browned. Add the garlic cloves and sauté for about a minute until fragrant.
Make the soup
STEP 4: Carefully dump the rest of the ingredients except the pasta in your slow cooker. Cook on high for 3–4 hours or on low for 6–8 hours until the veggies are soft.
STEP 5: Cook your rotini pasta according to the package directions about 10 minutes before serving. Stir the cooked pasta into the soup. Serve with extra dill sprinkled on top if desired, and enjoy!
