Air Fryer Chimichangas (Gluten Free)

Ingredients

  • 12 oz shredded rotisserie chicken breast
  • Juice of ½ an orange
  • Juice of ½ a lime
  • 1 large garlic clove minced
  • 1 tsp ground cumin
  • 1 can 4 oz mild diced green chiles, drained
  • 4 gluten free tortillas we love Mission brand
  • ½ C shredded pepper Jack cheese
  • Olive oil spray
  • 3 C shredded lettuce
  • 4 tbsp sour cream
  • 1 small avocado diced
  • ½ cup pico de gallo

Instructions

  • First, combine the orange juice, lime juice, garlic, drained chilies, cumin, and chicken in a large bowl and mix well together.
  • Next, scoop out about one-quarter of the mixture and place in the middle of a tortilla. Sprinkle the top with about 2 tbsp of cheese.
  • Fold in the sides of the tortilla and wrap it around the mixture somewhat tightly. Set it aside with the seam side down.
  • Repeat the last two steps for the rest of the mixture and tortillas.
  • After that, preheat your air fryer to 400 degrees F.
  • Then you will want to lightly spray your air fryer basket as well as all sides of the chimichangas with the cooking spray.
  • Place 2 of the chimichangas with the seam sides down in your air fryer basket and make sure they are not touching.
  • Cook the chimichangas for about 7 to 8 minutes, making sure to flip halfway them halfway through. You will know they are done cooking when they are slightly golden and crisp.
  • Repeat the last two steps with the rest of the chimichangas.
  • Top each chimichanga with shredded lettuce, two tbsp of pico de gallo, 1 tbsp of sour cream, and 1 oz of avocado. Garnish will cilantro if you like and enjoy!

Notes

Dairy-Free Sub: use vegan sour cream and shredded cheese or omit.

Expert Tips

  • If you do not have lime juice on hand, lemon juice will also work.
  • You can use guacamole in place of the diced avocado if you prefer.
  • If you are not a fan of pico de gallo, you can use your favorite salsa instead.
