These stuffed mushrooms are cooked in the oven, which takes less time than frying them however, you will need to plan ahead so they are ready when it's time to eat!
For this recipe, we recommend about a pound of mushrooms. The mushroom caps should be clean, dry, and have any stems removed.
Do not wash them! Just a quick rinse to remove the dirt will do. Mushrooms tend to absorb water like a sponge.
This is why it's important that they're as dry as possible before cooking so that they don't turn into soggy mushy messes while baking in your oven.
Are Giorgio Stuffed Baby Bella Mushrooms Gluten Free?
Unfortunately no, this brand of stuffed mushrooms is not gluten free. Although it is super easy to grab pre-made mushrooms to just warm up at home, it's just as easy to make them homemade!
The gluten-free stuffed portobello mushrooms recipe that I share in this post is incredibly simple and delicious. You will be able to whip them up for your family or guests in no time.
These gluten free stuffed mushrooms contain cream cheese and shredded cheese, so if you are on a dairy-free diet and want to make gluten-free, dairy-free stuffed mushrooms, you will want to substitute with some dairy-free cheeses.
I highly suggest Tofutti as a substitute for the cream cheese if you can find it near you. I have taste-tested it before and it is great!
How Do You Get Moisture out of Mushrooms Before Stuffing?
If you stuff mushrooms with bread crumbs or other dry ingredients without getting out some of that moisture first, your filling mixture will end up being too wet to cook properly.
The most popular way people do this before stuffing their mushrooms is by patting them dry, inside and out with some paper towels. This usually does the trick!
Are Stuffed Mushrooms Unhealthy?
It is a common misconception that stuffed mushrooms are inherently unhealthy. The truth is when cooked correctly and with the right ingredients, they can be nutritious and delicious.
You can fill them full of veggies like spinach and bell peppers which provide you vitamins A, C, and E as well as potassium to name just a few benefits for your body.
The portobello mushrooms themselves also contain B vitamins, riboflavin, niacin, and pantothenic acid which are all great for heart health.
Niacin is also good for your digestive system and maintaining healthy skin.
Plus, gluten-free stuffed mushrooms can be vegetarian or vegan. Just take out the bacon for vegetarian and the cheeses for vegan.

- Baby Portabella Mushrooms
- Cooked Bacon (Crumbled)
- Softened Cream Cheese
- Shredded Mozzarella Cheese
- Gluten Free Panko Breadcrumbs
- Chopped Chives
Directions
First, preheat your oven to 350 degrees Fahrenheit and line a sheet pan with parchment paper or foil.
Next, rinse the mushrooms to remove any dirt and dry the mushrooms with a paper towel. Carefully scoop out the stems.
After that, mix the cheeses, breadcrumbs, bacon, and chives in a mixing bowl.
Following that, stuff the mushrooms with the mixture and place them on the sheet pan without touching.
Finally, bake the mushrooms for 20 minutes or until the cheese is bubbly.
Expert Tips for Cooking Gluten Free Stuffed Mushrooms
Make sure your baking sheet is completely dry before cooking. Also, be sure to line your baking sheet with foil or parchment paper to avoid sticking.
To stuff your mushrooms, take about one teaspoon worth of filling at a time and pack it down, making sure to not overfill your mushrooms.
If you are baking these in the summer and are trying to avoid using your oven due to the heat, you can also bake these in your air fryer!
Just use the same temperature as stated in the recipe and cut the time in about half. Just be sure to cook your mushrooms in your air fryer until they are warm and the cheese is bubbly.
Why Are My Stuffed Mushrooms Rubbery?
While the mushrooms are cooking, they give off a lot of liquid. If you don't cook them long enough or use too much stuffing for the size of your mushrooms, some of this liquid may be left and it can cause an unpleasant texture.
In order to prevent this, just make sure your mushrooms are as dry as possible before cooking and don't overfill them with stuffing.
