How to Soak and Cook White Beans

Cooking white beans from scratch gives your chili a creamy texture and fresh flavor. Follow these simple steps:

Soaking (Optional but Recommended)

  • Rinse beans thoroughly and remove any debris.
  • Cover beans with water in a large bowl, about 3 inches above the beans.
  • Let soak for 8–12 hours or overnight.
  • Drain and rinse before cooking.

Cooking

  • Place soaked beans in a large pot and cover with fresh water by 1–2 inches.
  • Bring to a boil, then reduce to a simmer.
  • Cook uncovered for 45–60 minutes, stirring occasionally, until beans are tender.
  • Salt toward the end of cooking to prevent tough skins.

Tip: If short on time, use the quick-soak method: cover beans with water, bring to a boil for 2 minutes, then let sit for 1 hour before draining and cooking.

  2. Add ground turkey and cook, breaking it up, until almost browned.
  3. Stir in garlic and cook 1–2 minutes more until fragrant.
  4. Add bone broth, corn, beans, and all seasonings. Stir well.

Yes. Brown the turkey first, then add all remaining ingredients to the slow cooker. Cook on low heat for 4 to 6 hours.

What’s the best type of white bean to use?

Cannellini beans are a great choice, but navy beans or great northern beans work well too.

How spicy is this white turkey chili?

It’s mild, with a touch of heat from cayenne pepper. For more kick, add diced green chiles or more cayenne.

What’s the best way to serve this chili?

Top with sour cream, avocado, lime juice, fresh cilantro, or tortilla chips. A squeeze of green salsa or tomatillo salsa adds extra flavor.

How do I avoid the chili sticking to the bottom of the pot?

Deglaze or scrape the bottom of the pot after sautéing the turkey with a bit of the broth. This helps prevent a burn notice in a pressure cooker.
