2 15 oz cans of sweet corn kernels, 4 slices of bacon, 1 cup sour cream, 1 cup Mexican shredded cheese, 1 cup mayonnaise, 1 jalapeno, 3 scallions, ½ tsp black pepper, ¼ tsp garlic powder, ¼ tsp onion powder
  • Keep refrigerated until ready for serving.
  • Serve with tortilla chips or your other favorite dippers.

Notes

  • For extra creaminess, add a bit more softened cream cheese to the mixture.
  • Use fresh sweet corn when it's in season for the best flavor, but canned corn works perfectly fine too.
  • Experiment with different cheeses, like pepper jack, monterey jack, or sharp cheddar, for extra flavor.
  • For a healthier alternative, substitute Greek yogurt for sour cream and reduce the amount of mayonnaise, or use a light version.
  • Add a squeeze of fresh lime juice before serving for some added freshness.
  • Feel free to add more of your favorite veggies to this recipe. Chopped red onion is a great addition if you love onions.
