Ingredients

  • 2 (15 oz) cans of sweet corn kernels
  • 4 slices of bacon (you can use turkey bacon if you prefer)
  • 1 cup sour cream (we used the Kite Hill dairy free version)
  • 1 cup Mexican shredded cheese (we used Violife shreds)
  • 1 cup mayonnaise
  • 1 jalapeno 
  • 3 scallions (green onions)
  • ½ teaspoon black pepper, or to taste
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Prepare the ingredients

STEP 1:  Drain the corn, making sure that all of the liquid is completely drained.

STEP 2: Cook the bacon slices in a pan until they reach the crispiness that you prefer.

STEP 3: Chop the jalapeno, scallions, and cooked bacon. Set aside. If you do not want the dip to be too spicy, make sure to remove all of the jalapeno seeds.

STEP 4: Add all of the ingredients—the corn, mayonnaise, sour cream, chopped bacon, shredded cheese, chopped jalapeno, chopped scallions, and seasonings to a medium-large bowl. Mix until well combined.
