👩🏻🍳 Expert Tips
- For extra creaminess, add a bit more softened cream cheese to the mixture.
- Use fresh sweet corn when it's in season for the best flavor, but canned corn works perfectly fine too.
- Experiment with different cheeses, like pepper jack, monterey jack, or sharp cheddar, for extra flavor.
- For a healthier alternative, substitute Greek yogurt for sour cream and reduce the amount of mayonnaise, or use a light version.
- Add a squeeze of fresh lime juice before serving for some added freshness.
- Feel free to add more of your favorite veggies to this recipe. Chopped red onion is a great addition if you love onions.
🧂Substitutions & Variations
- Sub the scallions: Substitute fresh cilantro for scallions for a fresh herby flavor.
- No need to slice: If you do not want to slice fresh jalapeños, feel free to use the kind from a jar.
- Spice it up: Add a dash of chili powder or hot sauce for an extra kick of heat. You could also use a serrano pepper instead of jalapenos.
- Make it cheesy: Try topping the dip with crumbled feta cheese or grated Parmesan cheese for added richness.
- Make it vegetarian: For a vegetarian option, omit the bacon and add diced green or red peppers or green chiles for texture.
- Dairy free: We used Viola vegan shreds and Kite Hill sour cream to make this dip dairy free.
