Ingredients and Notes
- Olive oil
- Yellow onion
- Minced garlic
- Green bell peppers
- Ground turkey
- Italian seasoning
- Salt
- Diced tomatoes
- Worcestershire sauce
- White or brown rice
- Shredded cheddar cheese (optional)
Turkey- we love using ground turkey for this recipe, but if you are not a fan of turkey, you can use any ground meat in its place. Some examples include ground chicken, ground beef, or ground pork.
Bell Peppers- we like to use green bell peppers for this recipe. However, feel free to mix it up and add any color of bell pepper that you prefer.
Rice- we like to use white or brown rice for this recipe, but you can use any rice that you have on hand. If you want to make this recipe even healthier, feel free to substitute the rice for quinoa.
Cheese- the cheese is optional, but I think it takes these peppers to the next level. I recommend using shredded cheddar or mozzarella if you decide to add cheese.
Step by Step Instructions
Step 1: Prep
- First, preheat your air fryer to 400 degrees F for about 3-5 minutes.
- While your air fryer is preheating, cut the tops off of the peppers and remove all of the seeds. Next, dice up the tops of the peppers (except the stems) and set them to the side.
- Once your air fryer is done preheating, put the peppers in their fryer basket and cook for 6 minutes. While the peppers are being cooked, you can prepare the filling.
- To make the filling for your peppers, you will first want to heat the olive oil in a large, deep skillet on medium-high heat.
- Once the olive oil is hot, you will want to add the diced peppers, and onion and cook for about 2-3 minutes until the veggies are soft.
- After that, add the garlic and cook for an additional 1-2 minutes until very slightly browned.
- Next, add the ground beef and brown it until there is absolutely no pink.
- Now you will want to add in the salt, Italian seasoning, Worcestershire, and diced tomatoes and mix together to combine well.
- Next, add the water and uncooked rice and stir well.
- Turn down the heat to the medium-low setting, cover your pan with its lid and simmer for about 10-15 minutes, until the rice is nice and tender.
Step 2: Cook
- Once the rice and beef mixture is cooked through, scoop it evenly into each of the peppers and put the peppers back into the air fryer.
- Finally, cook the peppers in the air fryer at 400 degrees F for 4 minutes and open the drawer, Last but not least, top the peppers with shredded cheese if you like and cook for an additional 4 minutes until the cheese is melted and bubbly. (If you decide not to use cheese, you can just air fry the peppers for a total of 8 minutes.)
